migrating to exchange 2003 - appropriate routing incoming mails

Hi,
I need to upgrade an Exchange 2000 to a new Exchange 2003.
I want to install the new EX2003 and move the mailbox from the old EX2000 one by one. During this period I need that the incoming mails are routed correctly to both servers depending on where reside the mailbox.
I have a Mailsweeper SMTP Gateway as MX record for my DNS and I can route just to one server my incoming mails...

Question: If a mails arrive on a server that does not contain the smtp address is automatically forwarded to the appropriate server?
