migrating mailboxes, what are these

I am migrating all users to a new Exchange server and there are several mailboxes that I am unsure about. There are system attendant, system mailbox, and a mailbox called smtp. Do these need to be moved to the new server as well.

No - when you create a store on another server and move mailboxes to it, you'll see that the new store will have those as well. That's normal.

yes.
move everything, make sure users have permissions to their mailboxes.

if you encounter any errors (prompted for passwords) remove the SELF permission from mailbox rights and re-add it.
