Micros KDS Sort

We just reconfigured our restaurant as a prime beef /fresh fish restaurant. How can we get the Grill KDS to show chits in a certain sort order. ie. all beef together and all fish together.

and have the expo sort by seat number or the order in which the server entered the items?
