Metadata extraction

I need to extract metadata programatically in some thousands of files that I have. The problem is that they do not have an extension at the file header or using OLE information. I know that QuickView Plus can open the file and know in what Microsoft Office Product the file was created on. Could Anyone tell me how do this product know this? Do you have any other idea on how could I get this information?
