I would like to be able to track if a message is opened, deleted, forwarded, etc through Exchange or a third-part tool. Does anyone have any suggestions on this?

Try this:
Haven't used it myself but been told about it by a couple of people in the past...

If you allow .pst files in your environment, this is not possible, since once it's in a .pst file, Exchange is no longer capable of knowing about it.
