What is the amount of memory exchange server should be using when running. Currently it is using 431MB of memory on my server. It is also taking about 53% of the processing power. Is this normal?

Exchange likes memory and yes it will use quite a bit of it. CPU is affected by a variety of factors. When you say 53%, do you mean that's a sustained amount for more than a minute, or just a spike? My 2 mailbox Exchange servers hit >50% on spikes, but typical usage is in the 20-35% range.

Oh ok. Will it use more depending on the amount of mailboxes on the server? It is running 20-35% most of the time and then every few seconds it will jump to 50% and then go back down.

sounds normal. We have 500 users and store.exe uses ~1GB memory with CPU utilization sustained at 10% or less with spikes from 1-60%.

Keep in mind that upon first loading the system, the store.exe will not consume much memory at all however over the next 24-48 hours, as users access the system store.exe will consume more memory as needed and then it will plateau naturally.
