Mail server

I am using redhat linux 9.0
I just enabled nating using iptable ie
iptables -t nat -A POSTROUTING -o eth0 -j MASQUERADE
and dns of my website(hosted at another server)in pop3 and smtp in my outlook express.
I want to setup my own linux mail server.
What should I do.Which mail server i should go for.
Can any one help me in step by step solution or any simple document to install.
