Mail, POP3, STMP, I am confused

I just finally got my FP extensions working on my XP pro. Now, I would like my forms to send mail. I would also like to know where I can get more information about all this terminology. I am self-taught, so I basically need an "idiots guide for mail on your home server" unless someone could give me enough info to get started.
