several of the option in "view" are grey. Specifically I would like to make sub-folders to keep important emails in. How do I do that?

Wouldn't the options to create mailboxes be in the "mailbox" menu?
Select the mailbox for the account you want to create extra mailboxes for. That should let you create new mailboxes.
