Live State for Imaging Raided 2000/2003 servers

I need to image my Windows 2000 and 2003 servers (Dell PowerEdges), which are raided. I’m looking at Symantec Live State Server. Has anyone done this? Do I have to install the software on the computer to image it. Basically I would like to boot from a boot disk and image it to USB External Hard Drive. I work on a lot of different servers and I need a simple solution that I could do before I make any major changes on the server. (the live state part of it would be great, b/c I wouldn’t have to turn the server off).
Anyone with experience with Live State have any suggestions?
Anyone have any better ideas than Live State?
