I have successfully connected two win2k RRAS servers via dial-up connection VPN but I cannot get the "called server" visible on the calling side LAN outside of the calling server. In other words I can browse the called server on the calling server but not from other computers on the network.

Calling IP Range: 192.168.1.xxx
Called IP Range: 192.168.111.xxx

I am certain it has something to do with routing on the calling side...

How/where do I enter the necessary data so that other systems on the calling LAN can see the other LAN?

make sure you enable ip routing. or check the routing table to figure our where the traffic go.
