Is it possible to set up a user with ISDN service from a Definity G3 or would you have to go through a LEC for that service?

yes, you can setup line-side PRI and BRI from a definity.

assuming your definity also has isdn service to the outside pstn.

Ok, so I think the answer I'm looking for is "NO". :)

We do have the capability of setting the PRI/BRI settings, but we do not have ISDN service to an outside entity.

Thank you for clearing that up.....

If you do not have PRI service you can have your provider set you up a BRI line to use without having PRI trunking.

Ok, so if we have a T1 coming onto our facility, but we are only utlizing 25% of the channels, how can I separate those channels in order to use a few for a different task?
