I have a phone that has an INTRCPT softkey. It's my understanding that it is used intercept calls from my assistants ringing phone. How do I set this up so it will know who’s phone belongs to my assistant?

The intercept key is used with the cisco IP manager assistant feature, IPMA for short, and needs to be configured, otherwise the intercept key doesn't do anything. I'm not sure if that answers your question but below is the guide on how to deploy IPMA.

Instead of using intercept, you could program BLF call pickup. It's pretty slick and works way better.

I'm with ReallyRotten on this one. You could just setup a pickup group if the phones are within hearing distance from one another.
