If the document is of mime type text you can read form data using oscript or database calls if form data is in tables if anything more is needed say like a ms office type you would have to write some java code and call from oscript or you would use CWS and suitable ms office drivers to do this.Another suggestion is to look at Document Properties Synchronization module and see if they offer your particular requirement.
In any case what you want is serious stuff which I think nobody would give you for free as it involves a lot of moving things do all in a you are looking for a solution than a few snippets of code
Since I Love oscript I would probably use the oscript to java bridge
