In Outlook express one can do the following:

Create a new message
View > Source Edit > Click the source tab

Then add &yen between the BODY and /BODY

Click the Edit tab and see the Yen sign.


How is this done in Outlook 2000?
 
Actually, in OE or Outlook, it's quite a bit easier than what you're doing. Try Alt+0165. The 0165 must be entered on the number pad. ¥ This assumes that your message is using Arial as the font - it may be different key combinations in other fonts. Some fonts may not include this character.
 
Oops, forgot to mention:

Check Windows Character Map for other possible fonts that contain this character.

I do know how to enter the Ascii and Extended Ascii characters with the alt key and number pad. What I also wanted to do was edit the actual html code Outlook generated.

It's just easier to remember &copy than alt 169 to get the copyright sign.
