We have a Windows 2003 Server with Sharepoint 2003, this is to be used for a intranet.

A DNS entry exists with a 'friendly' name for the Sharepoint server so users can enter in there web browser, however as the server is called SERVER02, as soon as the web broswer connects it shows
How can I create an 'alias' for the servername that shows in IE?

I hope this question makes sense, if not please say!!

Sounds like your DNS entry is an alias (CNAME) pointing to Server2. Create a Host Records (A) in DNS which points intranet to the IP address of the IIS Server. That should do the trick, but if not... try adding a host header for the name intranet within the IIS properties of the web-site. Search IIS help for host header.
