how to Swap out hard driver for exchange 2000?

We have a exchange server which is installed in a scsi mirror, one drive failed and we are going to replace it with two new bigger drives, what is the best way to do it.
Since I have never done it before, just want to get some advise before I do it.
Ofcoure I will back every thing on it first.

backup.
set boot.ini correctly for BOTH drives.
shut down, change dead drive for good larger drive.
bring up on original partition.
create mirror.
shut down, change small drive for large drive.
shut down, use server magic to extend partition.
boot to mirrored drive.
create mirror.
