First, welcome!

Second, check out the FAQ's here on tek-tips.

Then, check out
Also, I wanted to caution you on the use of "from scratch" as you explore. Most distributions of linux (Redhat, Fedora, Mandrake, Ubunto, Debian, etc.) are already compiled programs and ready to run once installed. There are a few distributions, however, that actually custom compile the programs/binaries as part of the installation. These are very slow and potentially complicated.

I only mention it so that you might note the conversational nuance. Good luck!

you have 4 options...

Onsite training from peers
Internet
RTFM
Vendor driven Coures

Onsite training if feasable is best for learning inhouse processes etc

Best is to attend proper training courses for a specific Unix Flavour......
IBM AIX (admin 2)
Redhat Linux RHCE (certification)
Solaris 10 Admin
and so on....

if you a very adept studious person, the Internet and also Manuals/Books can also be a good way to familiarise yourself and get a grasp of unix.

"like trying to be a mechanic, anyone can tinker, but reading the book will get you through it, but nothing beats actual training or onsite training"

Get yourself a (older but servicable) computer. Get a removeable hard drive bay and a few sleeves. Get a few cheap 20 40 gig HDs.
Download or purchase a few common Linux distros.

Install and play.

BTW, Unbuntu was offering to send you their full distro on CD for free, not even shipping & handling. The default was to send you 10 CDs, so you might want to be nice and only ask for 1 or 2.
