How do you substitute fonts across all pges of a book

I am importing InDesign files which have already been designed as separate documents into an InDesign book. There are missing fonts for each page. How can I substitute fonts only once and have those font substitutions apply to all pages of the book? Any help on this would be greatly appreciated.
 
Go to Type>Find Font then
select which fond you want to replace and select the font you want to change to then hit Change all:

Be careful as this will change things if you have already formatted the job.
