How do you create multiple GALs for a single domain

My client has multiple locations across different towns. The network is configured as a single domain. Right now, they are only using the default global address list which shows every user. What they would like to do is create a separate GAL for each location. In other words, you go to the GAL and it lists all users by town. The reasoning behind this is to make it easier for a person to lookup a name (there are several hundred accounts). Can someone shed some light on this or point me to the right place?

Ok -- I have created 2 more GALs. Now the question is, how do I get these new GALs to display in Outlook 2003?
