How do I Monitor E-Mails

I have a webhosting client that wants to monitor his employee's e-mail's. I know how to do it in the Microsoft world (Exchange) but not Linux. I have a RedHat Linux v9 box running QMail for SMTP and Courier-IMAP for IMAP/POP3 access.
