how do I create an editable text box for pdf files in AI CS3

I'm using AI in cs3, and have a pdf (converted from MSWord) that I need to have some small sections editable by anyone, but the main form fixed.

i'll also need it to remain a multi page document.....

You can't do that in Illustrator, use acrobat professional for this purpose of Livecycle Designer
