How Can I create a sorting fields at run-time

A combination of parameters and formulas fields will do this. For example you want to sort by a-date or b- customer. Create a parameter field that asks which sort order. Then create a formula field with a if-then that assigns a value of the date or the customer, depending on the answer to the parameter field. Finally, sort on the formula field.
