Hosting multiple domains

We host multiple websites and each domain's website has email addresses. Currently we are using a sparc5 with sendmail and it is just over-whelmed with the amount of email that is generated.
I have built a new exchange 2003 server running on Windows 2003R2. I've created users in the AD and mailbox enabled them.
I've added their domains to the SMTP default virtual directory/Access/Relay with only the listed below and checked the box next to Allow all computers which successfully authenticate to relay, regardless of the list above.
I also added the domain Address Space under Routing groups/First routing Group/Connectors with a new connector called clients and checked the Connector Scope for Entire organization.

Problem...

I have some clients that say only some mail is coming through and some people who send to my clients get a bounce back report saying

I've been trying to find out all I can with this but before I make another change that I don't know will work, I thought I would ask for advice.

If it makes a difference, I also have GFI's MailSecurity and MailEssentials (each domain is listed as a local domain in their program) on the server for spam and virus protection.
Is my next step to add a recipient policy for each domain and list each email user in it and is that the best way to do it?
