Is there a way to completely hide Windows media player in group policy, if not is there a way to completely disable it?
 
You can use the software restrictions and create a hash rule to prevent people from opening it. (Can also just prevent wmplayer.exe from loading but people could just rename it).

Worth noting that you can just remove if from Add/Remove apps in Windows but that requires a local visit to each machine.

FYI - Software restrictions are in Group Policies.

To hide WMP try a simple batch script that will remove shortcuts to it within the start menu and desktop.

Code:
Del /Q "C:\Documents and Settings\All Users\Start Menu\Programs\Windows Media Player.lnk"

Or something to that effect. That combined with the GPO software policies will stop it - although it's worth noting that if they are local admins they could just install another media player and use that! :)
