We have just installed two new domain controllers onto the domain to allow more fault tolerance. Both have picked up the active directory schema from the primary DC but not the exchange options. Can someone please give me some advice on how to update these to include the exchange options as if we demote the DC we will not be able to administer the users email.

Do you mean the exchange attributes in ADUC?? You need to install the exchange system management tools on the dc in order to see the exchange attributes. I personally don't install the exchange tools on DCs, I have them installed on my workstation...
