Gutter Trouble

I'm relatively new to using Quark, and I'm working in 4.1. My question is this: How do you define gutters? I know that Quark defines the width between columns as such, but I'm working with a printer and he keeps saying that I need to keep my text and floating images 3/8" from the gutter in a perfect bound catalog. Can I assume that this is 3/8" from 0", meaning .375?
 
I presume your printer is talking about the bound edge of your catalog. When it's finished, a certain amount of the page will be hidden under the binding, so you should keep anything vital away from that area. In fact, anything vital should be kept away from all edges of your page, because they may get cut off.

Your 3/8" from 0" will only apply to right hand pages (assuming the catalog is bound on the left). On left hand pages, you should avoid 3/8" from the right of the page. If you look at a book or magazine, you'll see what I mean.

One way to set up your document is to click 'Facing Pages' when creating a new document. In the Margin Guides section of the New document dialog box, the left & right margins become Inside and Outside. The Inside is the bound edge (or gutter). Make this .375" and it will automatically set a guide correctly depending on whether it's a left or right page. Stay within this guide and you should be ok.
