Forwarding mail outside your AD 2

I run an Exchange server 2003 for an Education body, one of our users works half of each week here and half with another education organisation where she has a different e-mail address,
How can I get exchange to forward a copy of each message to her other office?
The Exchange General tab in ADUC only gives the option of forwarding to another user within the organisation

Any help or suggestions would be appreciated

Help her set up a rule in outlook that fowards a copy of her emails to her other address.
 
Mail-enabled contact is the way to go. goodforgood is 100% correct. I have to do it myself.
 
right on the money guys, I created a mail enabled contact and it worked first time, thanks for your help
