Hello.

We recently had someone leave our company, and are still getting a lot of calls that are going to their voicemail.

I know that incoming calls can be forwarded, but is there a way that if someone calls directly through to that extension, and gets voicemail, they can be forwarded to someone else's voicemail box instead?

No, it's a privacy issue thing. Even if you forward the extension, at the forward timeout, it will fall back into the originators mailbox. You can dump the original mailbox and make that extension an additional extension on a different mailbox.

How would I do that, so that person's voicemails go to our general delivery mailbox instead?

Delete that person's mailbox. By default, a call going to vm from an ext without an assigned mailbox will go to general delivery.

Press F983, and the admin password. Press the "MBOX" softkey, "DEL", and enter the mailbox number. The system will display the users name and ask you to confirm deletion. Press Rls, or hang up when done.
