I need to have a copy of every email sent by a user to another inbox, but without the user knowing this.

I setup the forwarding feature on the Users Exchange General TAB, but this option only forwards email incoming and not the outgoing ones.

How can I achieve this?

Thanks

Three ways come to mind. 1) Turn on message tracking and you can see the subjects of every mail the person sends and receives. Then, if you need more detail open the user's mailbox and look at the item. 2) Turn on message logging. This will send a copy all mail inbound and outbound to an Exchange recipient of your choice. The drawback is that you will capture mail from all users on that exchange server. 3) Install GFI Mail Essentials. It has a feature to capture and copy mail inbound and outbound for one specific email address.

Option 1 is the easiest. Option 3 will probably give you what you are looking for.

You would have to open the user's mailbox. Then if they happened to look at their rules they would notice it. Your original post suggests that you need to do this monitoring without the users knowledge.
