Is there a way I can easily extend the typical search instruction s/a-zA-Z// to include groups of foreign characters like those using cedillas, umlauts, etc.?

Two options come to mind. If you can find the codes/numeric values for the characters, you could just define them using their octal or hex values just like you'd quote them in "" string. Alternatively, there are predefined character sets in perlunicode that you can quote in the regex. That's probably the cleaner and more legible solution.
