Exchange 5.5 to 2003 upgrade on new server

So I have read everything that I can find, but I can't find the exact scenario of upgrading 5.5 to 2003 on a new server outlined anywhere.

Exchange Version/OS Version:ServerName
Exchange 5.5/Server 2000: server-mail
Exchange 2003/Server 2003: server-mailnew

I found these steps, which seem fairly straightforward, but I want to have the new to eventually have the same name as the 5.5 server. I know just enough to be dangerous but I am good at following directions so if I could get an extended version of the list below outlining if it's possible to rename the new server back to the old server's name after step 7, that would be great.

1. Install Windows 2003.
2. If you are going to make it a DC run DCPROMO (required ADPREP /FORESTPREP and ADPREP /DOMAINPREP first). Note: Microsoft recommends that it not be a DC.
3. Install Exchange 2003 into the same site as the 5.5.
4. Install Exchange SP1.
5. Use move mailbox wizard to move user mailboxes to 2003.
6. Redirect NAT or change MX record to have new mail get delivered to 2003 server.
7. remove the 5.5 server following MSKB 822450.

Don't forget the ADC (Active Directory Connector)
