I have a vmimage with Exchange 2003 Tools installed, but I need to remove the SMTP option from the Exchange Tools. How Can I do it?

Not following your question. You can disable the SMTP service if you don't want SMTP to flow from the machine.

is it something u install?
is it the deployment tools?
