Exchange 2000 - POP3 - Authentication Question

Recently set up our Exchange 2000 Server to allow POP3 clients to get e-mail. I have been going through an Exchange Book that mentioned the fact that using the domain names and passwords in the Outlook Express client actually get sent across the network in clear text, and are not encrypted in any way.

I need to know if this is true, and what my general steps should be so that I don't have to worry about the domain user names and passwords getting "sniffed" from anybody trying to cause problems.
