Exchage Server & Offsite Email

We rooling out a CRM solution, which will also track emails associated to clients/projects (Tour De Force). Currently our email is hosted offsite, and ould prefer to have it remain there. Is there a way to have our local server 'grab' the hosted emails, and then users would look to the local server for email?
 
how do you retrieve these emails on clients?

are they POP3 emails collected locally onto a client?

could the ISP not provide an SMTP feed to an External IP address that belongs to your Firewall/Router, how ever you access the internet, which port forwards (PAT - Port Address Translation on port 25) to your Exchange server if you have a fixed public IP address.

all you should need then (after a bit of additional config) is an SMTP server that belongs to them to tell Exchange to send to (you could configure to send yourself, but that has other issues)
