Excel Footer & Symbol Vanishes 1

I have added a footer to an Excel Document of the form
'Smith & Jones'.

The problem is that the '&' symbol is not shown.
I assume it is treated as a variable.
How can I force the literal & symbol to appear in the footer?

use two &
e.g.
Smith && Jones
