Etherchannel from 2970 to 3750

Would like advice as to whether this is the right way to implement some new switches:

Floor1: 35 users. 2924 with crossover Cat5E to 2970. Pair of fibre connectors from 2970 to Server Room.
Floors 2, 3 and 4 as per floor 1.

Server Room: 60 users plus all servers. 3 x 3750 with 2 fibre connectors between them to receive other floors. All linked with stackwise connectors.

Requirements: Use etherchannel to aggregate uplinks. Ensure that 3750 stack is configured correctly.

Questions: Given number of users, should I leave everything as a single VLAN? How do I make an etherchannel? Turn off spanning tree?

Any other advice gratefully received - Cisco isn't my area as you can see. I've managed to name them all and give them IP addresses but beyond that I'm stuck...
 
Depending on how many servers you have you might want to think about putting the servers on it's own vlan , other than that a single vlan with 90 users is not that big and should work ok . As far as configuring ether channel your best bet instead of trying to put all the commands here is to go to cisco.com and then do a search for "configuring etherchannel 3750" and you should get docs to do it .
