first step would be to use monitor to see what's going on. Turn on the embedded voicemail trace in monitor to see if you can discern anything from the log.
When it stops the next time you can then do some test calls into VM while watching monitor so it should be easier to narrow down the cause.
does the system also reboot at the same time? could the VM stopping be because the system is rebooting?
I have seen the system reboot when using embedded vm auto-attd's. Do these system's have AA's? If so you may want to check your menus for anything irregular.
I've noticed problems with the blank Normal Transfer that is used for extension transfer.
