Emails Are Being Copied Automatically

I've recently set-up Exchange Server 2003 on a new Windows 2003 server. The problem that I'm currently seeing is that the Administrator mailbox is being filled with copies of emails that are being sent/received.

I've checked as best I can and cannot find anything set that would indicate that tracking has been enabled etc.

Can someone please help?
