Email Server

Can anyone point me to any links on how to setup a simple Linux email server?
I have a spare PC which i want to make into a mail server.
Has to be a simple "how to" process as I am a newbie with Linux.

Current PC is using MS XP professional and outlook express.
I want to use the mail server as a spam blocker etc.. and not tie up my workstation.

Have you ever considered a mail server like:

http://www.instantservers.com

I have been using it for about 7 months now, and it works great and has some decent spam blocking abilities. Better than that, it took me 5 minutes to set it up.
