Sendmail doesn't need to be enabled to send out email, only to receive (and to resend if the remote server is down).

I need to make a couple of assumptions about your question:
1. The remote sendmail server will accept email from your system.
2. It will act like a relay for any email not destined for it.
3. You have sendmail managing mail on your current server (not enabled as a daemon, but available).

I'd edit your /etc/mail/sendmail.cf and add the other server as your relay server. This can be done by editing the DS entry.

# "Smart" relay host (may be null)
# Relay host to forward outgoing mail not in the local domain to.
# To forward ALL mail to this relay host, uncomment the appropriate
# rule in ruleset 0, as indicated by the ruleset's comments.
#DSmailer:relayhostname
DSotherserver.yourdomain.com

Hope this works. Others may have other ideas. As always, back up your old sendmail.cf and be sure to RTFM.

I am not very fond of sendmail, but use postfix instead. By default, it doesnt use the server as an inbound relay, and can be set up to send outbound mail in a snap.
