easiest way to upgrade from 5.5 to 2000

What is the easiest way to upgrade a one-Exchange 5.5-server domain to Exchange 2000? I have considered an in-place upgrade but have read many risks associated with that process. I have a fresh server that I can use. Should I install Exchange 2000 on the new server and migrate the mailboxes over? If I do this, how can I quickly reconfigure the Outlook clients to point to the new box?

Any ideas will be helpful!
