E-mail address???

Hi, my test lab consists of an Nt40 Server Domain called
xyz.com, i have an Exchange 5.5 member server which is named mail1. When addding recipients their email address by default is user@mail1.xyz.com. Can i change this this so their email address is user@xyz.com?

Well you can change the email address easily enough sure. If you open up the Exchange Administrator, go into the user's mailbox properties and select the Email-Adress tab.

From here you can simply edit the SMTP address.
 
When you created the Internet Mail Service, you shoulds have been prompted for the domain name. Whatever is entered becomes the default, and there is no way to change how the addresses are generated without removing and re-creating the IMS, but this is not hard - in fact, it's probably the easiest thing to create in Exchange.
