I can't say I have, but you shouldn't have any issues as long as it's a stable installation. E.G. Decent hardware, controller environment, throughly tested etc.
Can't see any reason why not - the rest of the network will see the DC as it's own server. We used multiple VM's here for IIS and SQL without any issues.
