None of my emails after I go into Document Properties has document fields listed. I am wanting to access the fields of the selected email to run an agent. What do I need to check in order to have the fields displayed?

If the fields are not displayed, then your database is most probably design-locked.
The only way for you to get access to the fields would be to create a new, blank database and copy/paste your document into it.
Design locking is limited to the database level, so your copy will be readable and you will be able to check the field values.

I've got nothing to hide, and I'd very much like to keep that away from prying eyes.
