Disk Configs for new servers

I'm about to order 3 new IBM 345 servers, one will be a web proxy server, one a web app server and the other a domino server (about 150 users). All will run W2K server. I'm having problems deciding what disk config to run with as we now have a SAN and will soon be consolidating our data storage on SAN. Not sure if I have enough detail but here are my specific questions:
1. I don't see any need to run RAID 5 on any of these boxes. I think the built in hardware RAID 1 will suffice, since the only box with data (the Domino server) will soon end up being stored on the SAN. The only catch is that we may run Domino without being on the SAN for awhile so I would need enough storage in the mean time. Does this make sense?
2. What about windows swap files on RAID 1? Is this OK, or is there a better solution?
Any help would be greatly appreciate as I'm being pushed to get these boxes ordered. Thanks.
