I have read that Cisco switches will attempt to trunk automatically. Does this mean that the default setting on a switch interface is "dynamic desirable"? If not, what is the default switchport mode?

Thank you.

peace

Depends on the switch some like the 2950's are default as desirable . If it bothers you just use the interface range command before or after installing and set trunking mode to off . Some other switches are default auto , really depends on the switch .

Correct, dynamic desireable is the default and a switch will automatically form a trunk if it can. If the switch supports both ISL and Dot1q, the switch will choose ISL as well.
