Hello aMember,
There is a lot of prgram that can help you write custom help files. It all depends which program you are comfortable with.
Currently I am using the Shalom Help Maker, it is a lot simple than MS Help Editor. You can download the latest version at the below site:
By the way, it's a freeware.
