Crealpte a new mailbox store and defrag

We are currently running Exchange 2003(Enterprise Edition) in our organization. We just have one Store Group with the database being on one volume(C:) and transaction logs on the other (E:). We are running out of space on C drive and I want to create a seperate data store on E
Following are the issues I am not sure of.
When I create a new mailbox store, where do I put the transaction log files??
Also when I am done creating the data store ,after moving some mailboxes to this new data store, can I defrag the old one ?? When I do then,would all users lose access to their emails or just the users that have mailboxes configured in the store I am running the defrag on??

If you want to put a data store on E:\ then you have to create a new Storage Group. Put those logs on C:\ and the store on E:\. Mind you, there's no point unless C and E are separate physical disks. If they're not it's irrelevant. Just make sure that they are on separate disks wherever possible.
As for defragging - NO. Never. Move all the mailboxes from old store to new store then dismount the old store. Find and delete the EDB and STM files then remount the store (There will be a warning or two, just accept them).
