At the moment I've got a custom format for time of
[h]:mm:ss is some cells and want to be able to get it to show as hours and minutes eg 2 hours 15 minutes as 2.25
(ignoring the seconds)

There must be an easy way to do it, but I just can't fathom it out

Try this.

Format cells, Custom, h.mm
Note don't use : in the format but do use it when inputting the time the cell
Worked for me

You phrasing in your question doesn't match your example. If you really want to see 2 hours 15 mins as 2.25 then multiply by 24 and format as a decimal.

Cheers, Glenn.

After re reading the example I agree with Glenn
Mistook 2.25 for 2.15 oops!
Mine won't work, sorry
